Pancake mix muffins might just be the easiest muffin in the world to make. With a few basic ingredients and 10 minutes of time, your muffins will be ready to pop in the oven to enjoy in just 18 minutes. These seriously are one of my favorite muffins alongside my apple cinnamon muffins.
Why do Pancake Mix muffins work?
You may find yourself scratching your head as to why you can make muffins out of pancake mix. It is simple. Pancake mix is made up of flour, baking powder, sugar, and salt which is the base of all muffins. That is why these work so well!
What will I need to make pancake mix muffins?
You will need the following supplies:
- muffin pan
- muffin liners
- large bowl
- medium bowl
- spatula or stirring spoon
How to Make Pancake Muffins
1. Preheat your oven to 375 degrees.
2. In a large bowl, combine dry pancake mix with sugar.
3. In a medium bowl, mix together eggs, milk, vegetable oil, and vanilla extract until very well combined.
4. Pour egg mixture into your large bowl with your dry mixture and stir well but be sure not to over mix. Small chunks are expected and ok to leave.
5. Fold chocolate chips into the batter gently.
6. Line a muffin pan with muffin liners and fill each to the top with muffin batter.
7. Bake for 18 minutes or until a toothpick can be inserted into the center of a muffin and pulled out clean.
8. Let muffins cool before serving and top with fresh fruit if desired.

* You can eat these chocolate chip pancake mix muffins either hot or cold.
* Although the pancake mix has sugar added, we recommend adding the recommended amount. If you feel like it is too much sugar you can alter it a bit to your preference.
* We always use store-bought “just add water” pancake mix, but you can use your own as long as it is a dry pancake recipe.
* You will want your pancake mix muffins to be a little on the lumpy side. You want to make sure that you don’t overmix it.
* If you prefer you can omit the chocolate chips and add in another delicious mixin.

You will want to store your pancake mix muffins in an airtight container in the fridge for up to 7 days.

Place them in a freezer-safe container and freeze. These will last up to 5 months.

- 3 large eggs
- 1 cup whole milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
