Ninja Foodi Chicken Pad Thai is a healthy and quick option to whip up on weekdays that is loaded with flavor as it combines chicken, vegetables, rice noodles, and Pad Thai sauce to create an irresistible meal even on the busiest nights.

Y’all know how much I love my Ninja Foodi! So of course when I made my Instant Pot Chicken Pad Thai recipe last week I had to create a similar version for my Ninja Foodi. 

This recipe is loaded with chicken, vegetables, and rice noodles and packed full of flavor and in the Ninja Foodi it is so simple to make. In less than 30 minutes you will have a healthy meal on the table to share with your family! The better news? This is a pretty affordable healthy meal to make at home.

How to make Ninja Foodi Chicken Pad Thai

  • Turn Foodi to saute.  Add in olive oil and allow to get warm. 
  • Add in diced chicken and garlic.  Saute for several minutes.  
  • Add in the soy sauce & pad thai sauce. 
  • Add in the carrots and green onions. 
  • Put the lid.
  • PC for 4 minutes + 5 minutes Natural Release.
  • Release the remaining pressure & remove your lid. 
  • Add in the peppers. Stir to combine & place the lid back on.  Allow to sit for 3 minutes giving the peppers a chance to cook.  
  • Remove the lid.  Add in cooked rice noodles. Toss carefully to combine all of the ingredients. 
  • Serve garnished with chopped peanuts and green onion tips.

Tips Tricks and FAQs

  • We love adding peanuts to this dish as a garnish, if you are not a fan of peanuts or allergic you can omit them. Try replacing them with sesame seeds instead.
  • If you do choose to use peanuts, any type (roasted, salted, unsalted) will work great. 
  • There is a lot of flexibility in this dish! Add extra chicken and vegetables if you choose.
  • Shrimp also works great in Pad Thai. You will want to be sure you add them frozen to prevent overcooking. 
  • With healthier dishes sometimes readers say they lack flavor. Be sure to add a little bit of salt to this recipe and squeeze some lime on top. It will be bursting with all kinds of flavor at that point. 
  • Let your dish release naturally on its own for those 5 minutes. This locks in flavor and ensures your chicken is juicy.

Try adding other vegetables to your Pad Thai even water chestnuts if you choose! We love adding extra vegetables to this dish. Some of our favorites are bean sprouts and mushrooms.

Ninja Foodi Chicken Pad Thai

Ingredients

  • 3 TBSP Olive Oil
  • 3 Chicken Breasts (skinless & boneless), diced
  • 3 TBSP Garlic, Minced
  • ¼ Cup Soy Sauce
  • 1 Cup Pad Thai Sauce
  • 1 ½ Cups Matchstick Carrots
  • 1 Red Pepper, sliced thin
  • 1 Yellow Pepper, sliced thin
  • 4 Green Onions, diced (white & light green parts only, use the green tips for garnish)
  • 8 oz Rice Noodles, cooked according to packages directions
  • ⅓ Cup Peanuts, chopped

Instructions

    1. Turn pot to saute.  Add in olive oil and allow to get warm. 
    2. Add in diced chicken and garlic.  Saute for several minutes.  
    3. Add in the soy sauce & pad thai sauce. 
    4. Add in the carrots and green onions. 
    5. Put the lid.
    6. PC for 4 minutes + 5 minutes Natural Release.
    7. Release the remaining pressure & remove your lid. 
    8. Add in the peppers. Stir to combine & place the lid back on.  Allow sitting for 3 minutes giving the peppers a chance to cook.  
    9. Remove the lid.  Add in cooked rice noodles. Toss carefully to combine all of the ingredients. 
    10. Serve garnished with chopped peanuts and green onion tips.
