What Type of Noodles Do You Use For Lasagna Soup
Generally, I break up lasagna noodles and toss it into my soup. But, if I am wanting something different I just reach for a smaller dry pasta. Since you are cooking in the Instant Pot you need to steer clear of fresh or homemade pasta. Neither can hold up during the cooking process.
Can I Use Sausage In Replace of Ground Beef
Absolutely. If you prefer sausage in your lasagna go for that. Or you can do part beef and part sausage for an incredible flavor. My family tends to enjoy ground beef, but you are welcome to use what you would like.
What Do You Put On Top of Lasagna Soup
I add on some shredded mozzarella cheese and a dollop of ricotta cheese. These two ingredients fully complete the lasagna soup. If you are not a fan of ricotta you can swap with cottage cheese, or skip it altogether.

Instant Pot Lasagna Soup
Ingredients
- 1 lb Ground Beef
- 2 TBSP Chopped Onions (frozen are amazing!)
- 2 TSP Minced garlic
- 1 14.5 oz Can Diced Tomatoes
- 1 Jar (24 oz) Spaghetti Sauce
- 2 TSP Dried Basil
- 1/2 TSP Dried Oregano
- 6 Ounces Broken Lasagna Noodles or favorite Pasta
- 4 1/2 Cups Beef Broth
- Ricotta Cheese
- Shredded Mozzarella Cheese
Instructions
- Set your Instant Pot to sauté. Add 1 TBSP of olive oil . Add the onions and garlic cook for 2 minutes. Stir regularly.
- Add your ground beef and cook about 4-5 minutes, or until no longer pink. Drain grease and return to Instant Pot.
- Add the diced tomatoes.
- Add spaghetti sauce, basil, oregano, beef broth, & broken lasagna noodles.
- Stir to make sure noodles are covered with the liquid.
- Set Instant Pot to high pressure for 4 minutes. Lock lid and make sure vent is closed. When coking time ends, Do a quick release.
- Top each bowl of soup with some ricotta cheese and a good sprinkle of shredded mozzarella cheese.
Notes
To FREEZE: Put cooked & cooled onions & garlic into freezer Ziploc. Add diced tomatoes, spaghetti sauce, basil, & oregano all into the freezer Ziploc. Seal bag. Date & include these notes: EMPTY INGREDIENTS OF LASAGNA SOUP INTO POT + 1 BAG OF GROUND BEEF (APRX. 1 LB) + 4 1/2 CUPS BEEF BROTH + 6 Ounces Broken Lasagna Noodles. PC - 4 MIN + QR
To REHEAT: (Frozen food will take longer to come to pressure, be patient)
- Take 1 bag of frozen ground beef, remove bag from freezer and sit on the counter while preparing dinner. (If in a rush, you can run the bag over warm water to loosen the frozen rice from the Ziploc)
- Empty contents of your Lasagna soup freezer bag in to your pot.
- Than add the ground beef in to your pot.
- Pour 4 1/2 Cups of beef broth in. Put lid on your pot. Turn to sealing position.
- Manual High pressure for 4 min. When cooking cycle ends do a quick release.
- Give a good stir.
- Top each bowl of soup with some ricotta cheese and a good sprinkle of shredded mozzarella cheese.

Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours

This was so good!! It’s like liquid lasagna, which is much less time consuming than actually lasagna but same wonderful taste!
