Can You Use The Instant Pot As A Double Boiler?
Yes. You can easily transform your IP to a double boiler. Using the Instant Pot as a double boiler is a great way to ensure you don’t burn that delicate chocolate you are trying to melt for cake pops, candies, chocolate bark, etc.
How Does A Double Boiler Pot Work?
The double boiler is unique because you have a double pan duo so it doesn’t cook the chocolate or ingredient directly in a pan like a regular pot does. You pour water into the first pan so it heats the second pan with the steam it produces from the water, then slowly melting the ingredient.
Double boilers work great with a metal or glass bowl that sits over the pot or pan. In this case, we will use the Instant Pot as the main pot and then add in a second pot that will melt the item slowly.

How To Use Instant Pot As A Double Boiler
- Start by placing around 2 cups of water inside your Instant Pot.
- Then set your stainless steel bowl or glass/pyrex or inside the pot. You want to ensure the bowl doesn’t go into the pot, that it catches on the sides so it hovers over the water. You may want to stick a wooden spoon in between your pot and your bowl so that it does get suctioned stuck.
- Next, turn your Instant Pot to Saute, and then allow it to warm up.
- Next, add in your chocolate or other ingredients you want to melt in the double boiler. Then follow the steps like you would with any other double boiler recipe.
- Make sure if you are melting chocolate for a while, you refill the water in your pot as it dissipates.
The beauty of this method is, it will keep your chocolate or other ingredient melted without overcooking it or hardening it over time. It allows you to work efficiently to meet your needs for the recipe.
Please remember to keep safety in mind, you do not want to over boil the water while doing large batches. Be mindful of how hot the water is becoming (and if it needs to be refilled) and remove your bowl to allow it to cool down a bit if starting to percolate to the point of your bowl blowing off. Please do not walk out of the room while using your instant pot as a double boiler, it should be supervised usage.

Notes
*You do not want your bowl to become suctioned to your instant pot and that can happen depending on the size of your bowl. If your bowl does not have a little play where it can move around easily and has a lip keeping it in place. If your bowl is a tighter fit, you will want to place something between your pot and bowl so that a suction affect does not happen. You can use a wooden spoon, a skewer, a chop stick, aluminum wedge in or like a sling, etc.
