You and your family are going to love these Pineapple Upside down pancakes! It combines classic pancakes with the pineapple upside down cake flavor that we all love! These are simple to make and perfect to enjoy any day of the week for breakfast or a late night snack! 

How to Make Blackstone Pineapple Upside Down Pancakes

  • Preheat your Blackstone to medium heat.
  • Dip pineapple slices in brown sugar, coat both sides.

  • Grill the pineapple for 1-2 minutes per side.
  • Place a maraschino cherry in the center.

  • Pour pancake batter over the top, aprx. ¼ cup of batter.
  • Cook until the edges start to set and you see some bubbling starting on top.  Aprx 2 minutes.

  • Carefully flip.

  • Cook for an additional 1 ½ minutes or until just brown on the bottom. 
  • Serve immediately & Enjoy!

Tips Tricks and FAQs

  • Be sure to cook your pineapple first, before covering with the pancake batter. 
  • Keep pancakes warm at around 200 degrees Fahrenheit until you are ready to serve. 
  • Use your favorite pancake syrup or even some leftover pineapple syrup from the can of pineapples. 
  • You will know your pancakes are ready to flip when you see lots of bubbles on the top. Avoid flipping more than once to ensure that they stay nice and fluffy.
  • Feel free to use your favorite boxed pancake mix as the base or a homemade pancake recipe.

Storage

These pancakes are best when enjoyed right away. 

If you would like to store them, you will want to place them in the fridge in an airtight container or bag with a piece of wax paper to separate each pancake. These will store for 1-2 days. 

Can I make Pineapple Upside Down Pancakes without a Blackstone Grill?

Yes! You can easily make these on a griddle or in a frying pan if you prefer.
