This will be the showstopper of all of your Easter desserts.  These were incredibly easy to create. I am not the best when it comes to working with buttercream frosting and I was more than pleasantly surprised at how easy these came together.  The results are just gorgeous! 

What Is The Cake For This Easter Cake

I made these using a boxed yellow cake mix.  I added a few drops of yellow food coloring to really bring out that burst of yellow color.  

I baked my yellow cake mix in mini bundt pans.  I wanted to create these gorgeous little nests that everyone could enjoy individually.  You can definitely create the same exact look using a larger bundt pan.  

Now, if you have a homemade cake recipe you love, feel free to use that instead. I just wanted to cut some corners on the baking part and get into the frosting and decorating these Easter mini cakes. 

Homemade Buttercream Frosting

I wanted to use homemade buttercream to frost these to ensure I got the perfect green color.  Add a few drops of green food coloring until you get the perfect green color.  

You are more than welcome to get creative with the colors of the frosting. Then I used the green shreds on top to look like the base of the nest.

What Are The Eggs On The Easter Nest 

I reached for some candy-coated egg candies. I went with Cadbury eggs but you are more than welcome to even do a Jelly bean. It is all about just having fun and making your dessert look like eggs in a nest.

Tips For Making Homemade Buttercream Frosting 

Room temperature ingredients is what you need. If you want a creamy and thick frosting you need to have butter that blends up creamy. If you don’t use soft butter it won’t become smooth and creamy as you want. 

Then I find using a stand mixer or hand mixer is a great way to really get a creamy texture. But if you don’t own one you can use a bowl and spoon to whip it up. 

How To Store Easter Bundt Cakes 

Because of the buttercream, I suggest storing these in the fridge. This will ensure the frosting stays good and doesn’t spoil.

Ingredients

  • 1/2 Cup Unsalted Butter, 1 stick room temperature
  • 5 Cups Powdered Sugar
  • 2 TSP Vanilla
  • 1/4 Cup Milk
  • Green Food Coloring

Instructions

  1. Beat butter with hand blender or stand mixer until fluffy.
  2. Add powdered sugar one cup at a time, blending after each addition.
  3. Add vanilla and milk and continue to blend until a nice thick creamy consistency.
  4. Add a few drops of green food coloring, blend until mixed in well.
