Baked donuts are so easy to make in the comfort of your own home and so versatile. They are soft, moist, and ready to enjoy in less than 30 minutes. This baked donut recipe features blueberry donuts that are perfect to enjoy for breakfast, a snack, or at a fun gathering.

We have always been a huge fan of baked donuts in our house. These baked blueberry donuts are so easy to make, and are ready pretty quickly! Since these are not fried we totally justify that we can eat them at least twice a week!
We love that you don’t need any fancy equipment when making these, just a mixing bowl and whisk and some donut pans!
We also love that this baked donut recipe can make some other favorite donut flavors like banana donuts, lemon donuts, and strawberry donuts with some slight alterations to the recipe.

What will I need to make baked donuts with blueberries?
To make these baked donuts, you will need the following ingredients:
- all-purpose flour
- baking powder
- baking soda
- salt
- nutmeg
- unsalted butter
- vegetable oil
- granulated sugar
- eggs
- vanilla extract
- buttermilk
- blueberries
- blueberry jam
- confectioners’ sugar
To make these baked donuts, you will need the following supplies:
- measuring cups and spoons of various sizes
- mixing bowls of various sizes
- spatula
- electric mixer
- non-stick cooking spray
- spatula
- donut pans
- piping bags
How to Make Baked Donuts
- Preheat the oven to 400 degrees F.
- Spray donut pans well with non-stick cooking spray. Set aside. For 18 donuts, I used donut pans that make 3” sized donuts.
- In a medium bowl, stir together flour, baking powder, baking soda, salt, and nutmeg. Set aside.
- In a large bowl, beat together butter, vegetable oil, and sugar on high until well mixed (about 1 minute).
- Beat (on high) eggs and vanilla extract into the wet ingredients until well mixed (about 1 minute).
- Beat (on a low setting) ½ of the flour mixture into the wet ingredients just until combined. Do not overmix.
- Add in all the buttermilk and beat (on low setting) until combined.
- Add in remaining flour mixture and beat (on low setting) just until fully combined. It’s okay if the batter is still slightly lumpy. Do not overmix or the donuts won’t bake up fluffy.
- Gently stir in blueberries until mixed well.
- Place donut batter into a large piping bag and pipe batter into donut pans. Fill each donut up only ¾ of the way full so they have room to grow without overflowing.
- Bake in the oven for 15-16 minutes or until a toothpick inserted in the donut comes out clean.
- Cool for 15 minutes in pan before removing from the pan to cool completely. Let cool completely before frosting.
Frosting:
- In a large bowl, beat together confectioners’ sugar, butter, and jam until light & fluffy (about 5 minutes).
- Pipe icing over cooled donuts.
Tips Tricks and FAQs
- Fresh blueberries are optimal when making these donuts, but you can use frozen ones as well. You will want to make sure that they are completely thawed and rinsed and dried prior to adding them to the batter.
- You can swap out the blueberries for other fruits. Baked strawberry donuts or baked banana donuts are also delicious!
Storage
You will want to store your baked donuts in an airtight container. If you choose to store them at room temperature they will last up to 3 days.
If you place them in the fridge they can last up to 5. If you do place them in the fridge you will want to serve them at room temperature.
Can these baked donuts be frozen?
Yes, these donuts can be frozen for up to 3 months. Wrap tightly in plastic wrap or store them in a sealed freezer-safe container. Thaw before serving.
Do I have to use buttermilk or can I swap it out for milk?
You will need to use buttermilk for this recipe. It gives it that nice fluffy consistency that we love. If you don’t have buttermilk you can make it with milk, vinegar, and lemon juice.
Can I Make these donuts if I don’t have buttermilk?
Yes, you can still make these donuts if you don’t have buttermilk. You will want to use ¾ cup of milk and stir in 1 Tablespoon of white vinegar and 1 Tablespoon of lemon juice.
Let this sit for five minutes and then stir again. This will taste very similar to buttermilk.
My baked donuts and not fluffy? What happened?
There are a few things that could have happened to cause your baked donuts to not be fluffy.
It is possible that you added too much flour. If you scoop the flour with your measuring cup you actually end up with more flour than the recipe calls for. When you scoop flour you want to pour flour into the measuring cup or use a scale to be really accurate.
You will also want to check your baking soda and baking powder to ensure they are not expired as this will also cause your donuts to not be fluffy.

- ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ cup (60 grams) unsalted butter, partially melted (about 30 seconds in the microwave)
- ¼ cup vegetable oil
- 1 cup (200 grams) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ¾ cup buttermilk (full fat)*
- 1 cup fresh blueberries
- Frosting:
- 2 cups (240 grams) confectioners’ sugar
- ½ cup (115 grams) unsalted butter, partially melted (about 30 seconds in the microwave)
- ¼ cup blueberry jam
