One of my favorite things to do is to always stock up on chuck roast when it comes on sale. There are so many great dishes (like this one, our crock pot roast, and our Instant Pot French Onion Pot Roast) that you can make with it. I store it in my freezer and then pull it out when I am ready to use it. You can easily find a chuck roast for around $10.00 when it is on sale and that is a huge win for a budget friendly meal when you are serving 6 hungry people.
How to Make Instant Pot Italian Beef
- Cut chuck roast into large chunks and place in the pot of the Instant Pot.
- Season with salt, garlic powder, onion powder, pepper, parsley, and Italian seasoning.
- Pour beef broth around the meat.
- Top meat with banana peppers.
- Place lid on Instant Pot and set to pressure cook for 35 minutes. Allow the pot to naturally release for 10 minutes, then finish with a quick release to remove the remaining pressure.
- After the pin on the top has dropped, remove the lid and take the meat out of the pot.
- Shred the meat with a fork and then return the meat to the pot and stir to combine it with the juices.
- Serve on a hard roll topped with provolone cheese and additional banana peppers (optional).
Tips Tricks and FAQs
- If your meat is frozen, you can still make this, you will just need to add some additional cooking time to the dish.
- Feel free to add even more flavor by adding onions and garlic to the dish. If you choose to do this, you will want to saute it prior to adding all the other ingredients to the instant pot.
- Cooking time will vary based on the chunks of your meat. If you have bigger chunks of meat you may need to cook it for 60 minutes. If your meat chunks are smaller, 35 minutes should be fine.

Can I prep this ahead of time?
Yes, you can easily prep this ahead of time. You will want to trim and cut your meat into chunks, then add all your seasonings to a Ziploc bag. Freeze for up to 3 months.
