Hawaiian Chicken
Hawaiian Chicken is one of my favorite go-to baked chicken recipes. Diced up chicken that is sweet and savory. This Hawaiian chicken recipe will be a crowd-pleaser for young and old.

Hawaiian Chicken
I love a sweet and savory dish. This recipe is one that my husband and boys all enjoy. Do a little prep, toss it in the oven, and let it bake itself.
Once it is done, thicken up the sauce, and spoon over rice and your tender juicy chicken. A must make.
What Is Hawaiian Chicken
Hawaiian chicken is very similar to a sweet and sour chicken. You will find that pineapple is the lead in the sweet. You create a sticky sauce that will stick on the chicken.
How to Make
Step 1: Dice up your chicken and then create your pineapple sauce. You will mix up the ingredients in a large bowl. Pineapple, brown sugar, soy sauce, seasonings, and mix. Pour chicken pieces into your sauce. Pour into an oven proof dish with a lid. I used my new Lodge cast iron casserole dish and it was amazing to cook with.
Step 2: Bake in the oven as directed. Once it is done, you will remove the chicken and pineapple.
Step 3: Now you will heat your sauce up and mix it with the cornstarch slurry. Once the sauce is thick, pour over the chicken again.
I used this cast iron cookware that is safe from stovetop to oven!
Ways to Serve Up This Chicken
Honestly eat the chicken plain or pair with something to help soak up the flavorful sauce. Give this recipe a try and let me know your favorite pairing.
Variations To The Recipe
- Dice up red or green bell peppers to mix in and bake. It adds such great flavor to the dish.
- Stir in some broccoli florets when it is close to done. It will soften up as it bakes. Just stir in the last 15 minutes of baking.
- Sprinkle with green onions or even parsley for a nice pop of color.
There are so many ways to adjust this recipe to fit what you want. I love how we made it but feel free to change up the recipe to fit what you think you will like the best.
How To Store Leftovers
You are more than welcome to store the leftovers in an airtight container. Store for up to three days in the fridge. Anything after that, use your best judgement.
I have not tried freezing the leftovers but I think it would freeze pretty well. The pineapple will become a lot softer but overall the flavor should still be tasty. Then just reheat the leftovers in the microwave.
This is a great dish to also meal prep for a few days out of the week. I use a single serve tupperware that I add rice, steamed veggies and then some of the chicken. It reheats nicely in the microwave!

Ingredients
- 2 LBS Chicken Cutlets, diced
- 2 (8 OZ) Cans Pineapple Chunks with juice
- 2 Cups Brown Sugar
- 1/2 Cup Soy Sauce
- 1 TSP Onion Powder
- 3/4 TSP Garlic Powder
- 2 TBSP Cornstarch
- 4 TBSP Water
Instructions
- Preheat oven to 350 degrees.
- Add pineapple chunks & juice into a medium sized bowl.
- Add in brown sugar, soy sauce, onion powder, & garlic powder. Mix well to combine.
- Add in chicken pieces, mix well to make sure all the chicken in coated well.
- Place chicken and sauce mixture in to an oven proof dish.
- Bake covered for 45 minutes.
- Remove from the oven. Move chicken & pineapple pieces to a serving dish.
- If your baking dish can be used on the stove top (or pour your liquid into a saucepan), bring the liquid to a slow boil.
- Combine water & cornstarch together and stir until smooth. Pour into your liquid.
- Continue to slow boil the liquid until it starts to thicken.
- Pour sauce over chicken & pineapple in your serving dish.
- Serve over rice.
