What makes this dumpling lasagna recipe go viral every time is the texture. The wonton wrappers steam into soft, glossy layers while the pork filling stays juicy and flavorful. A drizzle of Soyaki and Chili Onion Crunch at the end takes it over the top. It feels impressive, but it is actually very simple once you see how the layering works.

Ingredients

1 lb Ground Pork
4 Green Onions, thinly sliced
2 cloves Fresh Garlic, grated or finely minced
1 teaspoon Fresh Ginger, grated
4 tablespoons Trader Joe’s Soyaki Sauce
1 teaspoon Toasted Sesame Oil
1 to 2 teaspoons Trader Joe’s Chili Onion Crunch, to taste
1 teaspoon Rice Vinegar
¾ teaspoon black pepper or white pepper
1 to 2 TBSP Chicken Broth or water
I Package Wonton Wrappers
Small bowl of water for dipping wrappers

For Garnish
Extra Soyaki Sauce
Extra Chili Onion Crunch
Sliced green onion tops
Sesame Seeds or Trader Joe’s chiii onion crunch seasoning

Instructions

Prepare your steamer. If you do not have a traditional steamer, fill a large pot or deep saucepan halfway with water and bring it to a gentle boil. Place a steamer basket or rack on top. I just placed a small dish upside down to elevate my pan a bit.

In a large bowl, add the ground pork, sliced green onion whites, grated garlic, grated ginger, Soyaki sauce, sesame oil, chili onion crunch, rice vinegar, and pepper. Mix gently with your hands just until combined. Do not overmix.

Prepare a small baking dish or individual ramekins that will fit inside your steamer by basting it with some sesame oil.

Dip a wonton wrapper quickly into water or chicken broth, then lay it flat in the bottom of the dish. Overlap slightly if needed to fully cover the bottom.

Spread a thin layer of the pork mixture evenly over the wrappers.

Repeat with another layer of dipped wrappers and another thin layer of pork mixture. Continue layering until you run out of space or filling, finishing with a final layer of wonton wrappers on top. I was able to do 3 layers.

Pour one to two tablespoons of chicken broth or water over the top to keep everything moist during steaming.

Carefully transfer the dish to the steamer. Cover and steam for about 25 minutes, or until the pork is fully cooked and the wrappers are tender and glossy.

Remove from the steamer and let rest for a few minutes.

Finish with a drizzle of Soyaki sauce, chili onion crunch, sliced green onion tops, and sesame seeds or chili onion crunch seasoning before serving.

Tips & Tricks

  • Do not overmix the pork filling or it can become dense
  • Lightly brush your baking dish with sesame oil so nothing sticks
  • Dip the wrappers quickly, do not soak them or they will tear
  • Overlap wrappers slightly so each layer holds together
  • Three layers is the sweet spot for the best texture
  • Let the dumpling lasagna rest a few minutes before slicing
  • Taste before adding extra Soyaki at the end since it already brings saltiness

FAQs

Steaming gives the best dumpling texture, but you can bake it covered at 350 degrees until the pork is cooked through. The texture will be slightly different but still delicious.

Yes. You can assemble it a few hours ahead and keep it covered in the refrigerator, then steam when ready to serve.

Absolutely. Ground chicken or even ground turkey works well, just make sure it is well seasoned.

Soyaki adds a great balance of sweet and savory flavor, but you can substitute soy sauce with a little honey, garlic, and ginger if needed.
