½ small onion, diced
3 to 4 cloves garlic, minced
1 pint cherry tomatoes, halved
12 ounces Trader Joe’s langostino tails
16 ounces Trader Joe’s lobster bisque
1 pound pasta of choice, cooked just shy of al dente
Parmesan cheese, to taste
Lemon zest and juice from ½ lemon, optional
Fresh parsley, chopped

Instructions
Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook until softened and fragrant, about 3 to 4 minutes.

Stir in the cherry tomatoes and cook until they begin to soften and release their juices. Season with pepper.

Add the langostino tails to the skillet and gently stir to combine. Pour in the lobster bisque and allow the mixture to warm through, stirring occasionally, until the langostino is fully heated.

Sprinkle in the Parmesan cheese and stir until melted and incorporated. If using, add the lemon zest and a squeeze of fresh lemon juice for brightness.

Add the cooked pasta directly to the skillet along with the chopped parsley. Toss well until the pasta is fully coated in the creamy lobster sauce.

Serve immediately with additional Parmesan cheese and fresh parsley, if desired.

Tips & Tricks

  • Cook the pasta just shy of al dente since it will finish cooking in the sauce
  • A thicker pasta like fettuccine or rigatoni holds the sauce best
  • Stir gently once the langostino is added so it stays tender
  • Add the Parmesan slowly and stir to prevent clumping
  • Finish with lemon zest and juice to brighten the rich sauce
