These Easy S’mores Cookies are oozing with chewy gooeyness as it combines your favorite cookie dough, graham crackers, and marshmallows to create a campfire inspired dessert right in the comfort of your own home. S’mores cookies have always been a favorite in our house.
S’mores Cookies Recipe
Camping has always been a huge part of my life. I love being in nature and just forgetting about all the cares in the world. But what I love most about camping are the s’mores. It always makes me a little sad when winter hits knowing camping season and s’mores are gone, until now! These Easy S’mores cookies bring all the goodness right into my kitchen.
A while back I created these Peanut Butter Smores Cookies which are delicious, but I wanted to create a cookie that could be ready in a snap with very few ingredients, meet this easy s’mores cookie recipe!
With just three ingredients and very little prep, you will create an ooey-gooey soft lava like s’more cookie that you will never be able to resist. It is that good!
How to make S’mores Cookies
- Slice or scoop enough cookie dough to wrap around your marshmallow. I sliced about 1” thick slices.
- Flatten your cookie dough.
- Sprinkle with a teaspoon of graham cracker crumbs.
- Place one marshmallow in the center.
- Start to wrap the cookie dough evenly around your marshmallow.
- Place your cookie dough balls in the freezer for 15 minutes to set.
- Preheat your oven to 375 degrees.
- Spray a cookie sheet with canola spray or line with parchment paper.
- Place cookies on your cookie sheet, leaving a few inches in between each one. These cookies will be fairly large.
- Bake 12-15 minutes until cookies are starting to brown.
- Remove from the oven and let sit for about 10-15 minutes before serving.
Tips Tricks and FAQs
- What makes these cookies unique and perfect is that the marshmallow is completely wrapped in cookie dough. So when prepping these cookies be sure you make a dough ball. You want to make sure there are no gaps in your ball or your marshmallow will begin to ooze out while baking.
- I know it is tempting to skip the stage of freezing these cookies, but make sure you freeze them for at least 15 minutes. This ensures that the cookies bake correctly.
- The secret to a good cookie is underbaking it. They will continue to bake a bit after you pull them out of the oven while they cool.
- The marshmallows will be so hot coming out of the oven. Be sure you wait the full 10-15 minutes before enjoying.
Storage
Store your cookies in an airtight container for up to 3 days.
These cookies are best enjoyed warm. Heat them in the microwave for 10-15 seconds to make your cookie nice and gooey again.
Freezer
One of my favorite things to do is to make a batch of cookies and freeze the dough. A common question is can you do this with s’more cookies? And the answer is yes, you can!
Prepare the cookies according to the recipe, but instead of keeping them in the freezer for 15 minutes let them freeze completely on the tray.
Once frozen, place them in a freezer-safe bag. When you are ready to enjoy, take the desired amount out of the bag, and bake.
I don’t recommend freezing these cookies after you have baked them.
