Ingredients:
- ¾ cup salted butter
- 2/3 cup white granulated sugar
- 2 large eggs
- 4 tsp vanilla extract, divided
- 2/3 cup whole milk
- 2 cups all-purpose flour
- ½ tsp baking powder
- ½ cup rainbow sprinkles
- 3 cups powdered sugar
- 8 oz block cream cheese
How to Make Confetti Cupcakes
- Preheat the oven to 350 degrees.
- In a large mixing bowl, use an electric hand mixer to beat together the butter and sugar until homogenous.
- Whisk in the eggs, milk, and vanilla until they are all fully incorporated with the creamed butter mixture.
- Gently whisk in the baking powder and flour until homogenous. Be sure to scrape along the bottom of the bowl to ensure no clumps of flour remain unincorporated.
- Line a muffin tin with cupcake liners and fill each liner evenly with batter. Bake the cupcakes for 20 minutes while you prepare the cream cheese frosting.
- In a medium sized mixing bowl combine the cream cheese and powdered sugar using an electric hand mixer on medium speed.
- As soon as the cupcakes are done baking, use a large pipping bag tip or a small spoon to create a cylindrical hole in the middle of each cupcake. Place the cupcakes in the fridge to chill for 20 minutes.
- Fill each cupcake hole with sprinkles and frost the tops as desired.
- Serve and enjoy!
Tips Tricks and FAQs
- Be sure to cool the cupcakes prior to adding the sprinkles. If they are not cooled first, you will end up with a melted sprinkle mess because of the heat from the cupcake.
- Each cupcake, once the middle is removed, holds about 1 Tablespoon of sprinkles.
- Don’t forget to top your cupcakes with sprinkles if you prefer.
- The cream cheese frosting pairs great with the vanilla cupcakes, but you can choose another flavor of frosting if you prefer. You can never go wrong with chocolate or vanilla.
- Choose any sprinkle color that you love. Pair it with the theme of the occasion to really surprise your friends and guests.
Storage
You will want to store your cupcakes at room temperature in a plastic container for up to 4 days.
If you want to keep your cupcakes soft, light, and moist longer, you can store them in the fridge. They will keep in the fridge for about 1 week.
