  • ¾ cup salted butter
  • 2/3 cup white granulated sugar
  • 2 large eggs
  • 4 tsp vanilla extract, divided
  • 2/3 cup whole milk
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ cup rainbow sprinkles
  • 3 cups powdered sugar
  • 8 oz block cream cheese

How to Make Confetti Cupcakes

  • Preheat the oven to 350 degrees. 
  • In a large mixing bowl, use an electric hand mixer to beat together the butter and sugar until homogenous.
  • Whisk in the eggs, milk, and vanilla until they are all fully incorporated with the creamed butter mixture.
  • Gently whisk in the baking powder and flour until homogenous. Be sure to scrape along the bottom of the bowl to ensure no clumps of flour remain unincorporated.
  • Line a muffin tin with cupcake liners and fill each liner evenly with batter. Bake the cupcakes for 20 minutes while you prepare the cream cheese frosting.
