Santa Fe Chicken Foil Packets

Santa Fe Chicken Foil Packets are perfect for outdoor grilling as it combines chicken, taco seasoning, beans, and peppers that is then topped with a little bit of cheese that is ready to eat in no time! The flavor is bursting in these and has quickly become our favorite chicken foil packet dinner of all time.

During the summer I love easy recipes where I can spend most of my time outside rather than making dinner in the hot kitchen with the oven on! These Santa Fe Chicken Foil packets allow you to create a healthy and delicious meal right on the BBQ that requires very little prep and even less clean up!

Top these with some fresh pico de gallo once they are done for a delicious meal you will find yourself making all summer long. 

How to Make Santa Fe Chicken Foil Packets

  • Prepare the grill according to the manufacturer’s directions to burn at medium-high heat.  
  • Cut six 12 to 18-inch rectangle pieces of heavy-duty aluminum foil. Spritz the foil with nonstick cooking spray on the inside where the food will rest. 
  • Season the chicken breast on both sides using the taco seasoning, reserving the remaining seasoning. Place each chicken breast in the middle of a piece of aluminum foil.

  • In a large bowl, combine the salsa, beans, yellow bell pepper, red bell pepper, lime juice, lime zest, and the remaining taco seasoning. 
  • Spoon ⅙ of the mixture over each piece of chicken. 
  • To fold the pockets, bring the long sides of the aluminum foil to meet over the chicken. Fold the ends of the aluminum foil together, folding twice to create a seam. Roll up the shorter ends of the aluminum foil at least twice to create a sealed pocket.

  • Place the chicken packets on the grill and cover the grill. Cook for 15 to 20 minutes, rotating the packets halfway if needed so they each cook evenly. Check the chicken for an internal temperature of 165 degrees. 
  • Remove the packets from the grill and carefully open to add cheese. Reseal the packets to allow the cheese to melt.

Tips Tricks and FAQs

  • After your chicken cooks squeeze some lime, add a dollop of sour cream, some avocado, and salsa to the top if you would like. 

Storage

Store your leftover Santa Fe Chicken in the fridge in an airtight container for up to 3 days. 

How do I serve my Santa Fe Chicken Foil Packets?

You can serve your chicken right in the foil. I always place a paper plate underneath (for easy clean up) so that it gives some stability to the foil packet.

You can also cut your chicken and add it to a tortilla if you choose as well. 

How do I fold my foil for a foil pack?

You will want to bring the long sides of the foil to meet in the middle of the piece of chicken. Then you will fold the ends together two times creating a seam. Roll the shorter ends twice as well. This creates the perfect pocket for your foil pack.

Can I bake this in the oven?

Yes, you can bake this in the oven. Add all your foil packs to a baking sheet and cook until your chicken and vegetables are cooked and tender.

Santa Fe Chicken Foil Packets

Santa Fe Chicken Foil Packets are perfect for outdoor grilling as it combines chicken, taco seasoning, beans, and peppers that is then topped with a little bit of cheese that is ready to eat in no time! 

Ingredients

  • 6 small boneless, skinless chicken breasts (or 3 large breasts cut in half)
  • 3 tablespoons taco seasoning mix, divided
  • 1 ½ cup salsa
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 yellow bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 lime, zested and juiced
  • ½ cup shredded fiesta cheese blend
  • ½ cup chopped green onions, for garnish

Instructions

    1. Prepare the grill according to the manufacturer's directions to burn at medium-high heat.
