What is the secret to moist meatloaf?
The secret to moist meatloaf is using a high fat meat. I use an 80/20 but you could even use a 70/30. The leaner the meat the more dry the meatloaf is.
Ingredients:
- 2 Pounds Ground Beef (80/20)
- 1 Packet Lipton Onion Soup Mix
- ¾ Cup Italian Seasoned Breadcrumbs
- ¾ Cup Buttermilk
- 2 Large Eggs
- ⅔ Cup Ketchup, Divided
How to Make Lipton Onion Soup Meatloaf
- Preheat the oven to 350℉ and prepare a 9×5” loaf pan with nonstick cooking spray and parchment paper. Overhang the parchment paper on both sides to make removing the meatloaf easier later on.
- In a large mixing bowl, combine the ground beef, soup mix, breadcrumbs, buttermilk, eggs and ⅓ cup of the ketchup. Mix using a rubber spatula or clean hands.
- Transfer the ground beef mixture to the prepared loaf pan and press into the pan. Spread the other ⅓ cup of ketchup evenly over the top and bake for 55-60 minutes at 350℉ or until the meatloaf reaches an internal temperature of 160-165℉.
- Allow to rest for 10 minutes before removing from the pan and slicing. Serve with mashed potatoes and garnish with fresh parsley. Enjoy!
Tips Tricks and FAQs
- The soup mix and the ketchup has quite a bit of salt. I don’t recommend adding more to the recipe.
- If you do not have any buttermilk on hand, you can use milk, half and half, or beef stock instead.
- Onion soup mix is our go to for this recipe, but if you want to switch up the flavors you can also use a mushroom soup mix.
- Add shredded cheddar cheese to your meatloaf for a fun new flavor.
- Be sure you use an 80/20 meat or a meat with higher fat to ensure your meatloaf stays moist.
- Don’t overmix your meat as you are mixing it. The more you mix the tougher your meatloaf will become after it is cooked.
Storage
You will want to store your leftover meatloaf in the fridge in an airtight container. This will keep for up to 3 days.
Reheating
You will want to reheat your meatloaf in the oven or in the microwave.
