Jello Roll-Ups

Ingredients:

  • 1 ½ Cups Mini Marshmallows
  • 1 Box Jello (3 ounces)
  • ½ Cup Boiling Water

How to Make Jello Roll-Ups

  • Spray an 8×8 pan with nonstick cooking spray. Set aside.
  • Place the jello powder in a medium mixing bowl and add the boiling water.
  • Whisk lightly until dissolved or close to it.
  • Add the marshmallows to the bowl and microwave on high for 1 minute and 30 seconds. 
  • Remove and whisk again until there are no marshmallow lumps.
  • Pour into the prepared pan and place in the fridge for 2 hours or until set.
  • Remove by gently pulling up one corner and slowly peeling it out of the pan.
  • Roll into a tight tube like you would cinnamon rolls. Place back in the pan and back in the fridge for about 10 minutes. 
  • Remove and slice into ½ inch pieces using a sharp knife. Do not saw back and forth, one cut, straight down.

Tips Tricks and FAQs

  • When you make these you will need to make one color / flavor at a time. If you would like multiple colors and flavors you need to make them separately. 
  • Be sure to not leave the jello in the fridge too long when it is still a sheet. This causes it to dry out too much making it harder to stick when you roll it up. 
  • When cooking the marshmallows, be sure that you do not overcook them. If they do become overcooked, they will dissolve too much into the jello mixture and it won’t leave the white film on top like you want. The white film is necessary to make the second color within your rollup when they’re finished. 
  • When cutting, do not saw with the knife, make one straight cut down through the jello roll-up. 
  • You can make your jello roll ups as big or as small as you would like. Just note if you make these bigger than the suggested size, you will get less in each batch. 
  • When you start making these, it may take a couple of times of rolling them to get them tight enough. 
  • If you find that the middle of the roll is thicker than the ends don’t worry, this is normal.

Storage

You will want to store your jello roll-ups in the fridge in an airtight container for up to 5 days.
