Chicken Florentine Pasta combines noodles, chicken, spinach, mushrooms, cheese, and a few other basic ingredients that are then topped with panko crumbs for a simple, yet delicious meal that is easy to prepare even on the busiest nights. Use rotisserie chicken and this becomes a super quick delicious meal.

You will love how easy this dish comes together especially when using rotisserie chicken and when you prep it ahead of time. Not only that, but the flavor is out of this world!
What is Chicken Florentine Pasta?
Depending on who you ask and what recipe you find Chicken Florentine is made several different ways, some are baked like this version where others are just mixed together once all the ingredients are hot. The one thing that they all have in common is that they are loaded with spinach because “Florentine” means spinach!
How to make Chicken Florentine Pasta Bake
- Preheat oven to 350 degrees
- In a large bowl, add cream of chicken, swiss cheese, mayonnaise, sour cream, & garlic powder. Mix to combine.
- Add in cooked chicken, mushrooms & thawed spinach. Stir well to combine.
- Pour in cooked pasta. Carefully mix to combine well.
- Pour into a 9×13 baking dish.
- Add melted butter to the bread crumbs. Mix to make sure all of the bread crumbs are coated with melted butter. Sprinkle over the top.
- Bake uncovered for 40-45 min. You can broil the last 5 minutes to brown up the bread crumbs nicely.
Tips Tricks and FAQs
- When using frozen spinach it contains a lot of water. You are going to want to get as much water out of it as possible. I usually do this by wrapping it in clean paper towels and squeezing out the water over the sink. If you skip this step you most likely will have watery pasta.
- If you don’t have elbow macaroni on hand you want easily substitute the pasta, Penne pasta or bowtie pasta would both work great as well.
- You can easily half the recipe and use a smaller dish if you are only feeding a few people.

Store your leftovers in the fridge for up to 3 days.
Make-Ahead
This is the perfect dish to make ahead of time! I love prepping this dish in the morning and covering and placing it in the fridge until I am ready to bake for dinner. You can make it up to 24 hours ahead of time.

Ingredients
- 2 Cups Elbow Macaroni, cooked al dente
- 3 Cups Cooked Chopped Chicken
- 1 pkg (10 oz) frozen spinach, thawed
- 8 oz sliced mushrooms
- 1 Can (10 ¾ oz) Cream of Chicken
- 2 Cups Shredded Swiss Cheese
- ½ Cup Mayonnaise
- ½ Cup Sour Cream
- 1 TSP Garlic Powder
- 1 Cup Seasoned Panko Bread Crumbs (regular seasoned bread crumbs are also good)
- 3 TBSP Melted Butter
