I love using our Blackstone grill, especially in the summertime. It is so easy and makes some of the most delicious recipes. One of our favorites these days is this Blackstone Sweet & Tangy Pineapple Chicken. It is loaded with flavor and ready to enjoy in no time!

Ingredients
• 1lb Boneless Chicken Thighs (Cubed)
• 1 Red Onion (Diced)
• 15oz Can Baby Corn
• 1 Orange Pepper (sliced)
• 1 Yellow Pepper (sliced)
• 1 Red Pepper (sliced)
• 1 Pineapple
• 19oz Sweet & Tangy Sauce
How To Make Blackstone Sweet & Tangy Pineapple Chicken
1. Slice the pineapple in half.
2. Carve out the center of the pineapple to create 2 pineapple boats.
3. Cube the pineapple you removed from the pineapple boats to use in your stir fry.
4. Preheat the Blackstone to medium heat.
5. Cover the Blackstone in nonstick spray.
6. Place the chicken, peppers, onion, pineapple, baby corn & pineapple boats onto the Blackstone.
7. Cook, stirring and turning frequently until chicken & veggies have caramelized & browned.
8. Drizzle with sweet & tangy sauce while stirring & turning.
9. Serve in the pineapple boats and enjoy.
Tips Tricks and FAQs
- Be sure to spray the grill. This prevents any sticking from occurring.
- I love all the colors from using a variety of peppers. You can use one color if you prefer.
- Boneless skinless chicken thighs give this dish so much flavor, you can opt for boneless skinless chicken, but you will lose some flavor and juiciness.
- Grab the baby corn in the canned vegetable section at the grocery store.
- Feel free to double the recipe if needed.
Storage
You will want to store your leftovers in the fridge in an airtight container for up to 2 days. I recommend removing it from the pineapple boat.
