These magical onions are perfect to top on just about anything from pizza to burgers to eggs and everything in between. They add another flavor and crunch and flavor that you and your family will absolutely love!

Pickled onions are tangy with a crunch to them. The combination of the onion, the apple cider vinegar, and the white vinegar balance each other perfectly for a beautiful flavor combination.
How to make pickled red onions
- Boil your jars, lids, and canning rings in water for one minute to sterilize, and set aside.
- Cut your red onions into fourths, and then “rainbow” cut them until you have thin slices.
- Stuff the onions into canning jars, packing as tightly as you can. It is okay if the onions break.
- In a medium saucepan, bring your vinegars, sugar, salt, and peppercorn to a boil.
- Reduce to medium, and simmer for about 5 minutes.
- While the vinegar is still hot, pour over the top of the onions, leaving about an inch to the top of the jar.
- Immediately close the jars with a canning lid, and place upside down on the counter.
- Store at room temperature, and refrigerate when opened.
- These onions are perfect over soup, chili, cheese platters, sandwiches, and more!
Tips Tricks and FAQs
- You can easily double or triple the batch or even halve it if you choose.
- If you are worried that your onions are going to be too potent, you can mellow them out a bit. Just boil two cups of water, place your onions in a strainer in the sink and pour the hot water over them. This will help mellow them out quite a bit.
- You can follow this same recipe with white or yellow onions as well.
- If you would like to cut out the sugar, you can use honey or maple sugar if you choose.
Do I have to use apple cider vinegar?
You don’t have to use apple cider vinegar in this recipe. You can use all white vinegar, but it will change the flavor of your pickled onions a bit. They won’t be as tangy as they are with the apple cider.
How long do pickled onions last once they are opened?
Once you open your jar of pickled onions you will want to consume them within 2-3 months.

- 2 TBSP cup sugar
- 1 TSP salt
