Ingredients
- ½ cup purple cabbage
- 1 Tbsp olive oil
- ½ cup sweet onion diced
- 1 cup of diced carrots, 3
- 1 cup of diced celery, 4 stalks
- 1 Tbsp minced garlic
- 1 red bell pepper diced
- 1 zucchini diced
- 1 cup cherry tomatoes cut in half
- 8 cup of vegetable broth
- 1 fresh bay leaf
- 1 Tsp of fresh oregano
- 1 Tbsp diced basil
- 2-4 pinches of red pepper powder
- Salt and Pepper to taste
Instructions
- Dice all vegetables.
- Turn Instant Pot on to “sautee”.
- Sautee onion, carrots and celery and garlic with olive oil for 7 minutes.
- Add all the remaining ingredients to the pot and stir.
- Cover the pot with the lid and seal.
- Seal the release valve and cook on manual for 5 minutes.
- Once done you may quick release the steam carefully then remove the lid.
- Enjoy!
