So my family and the Internet has went crazy over my whole roasted cauliflower. It got me to thinking, I need to try broccoli. I love roasted broccoli so it made total sense to try this.

When you roast vegetables and crest caramelization it transforms the flavor. Yes it still tastes like broccoli, but totally different then steaming broccoli.

Why Use The Instant Pot For Roasted Broccoli
The Instant Pot is wonderful for cooking the broccoli to make it tender. Then you transfer to a pan to bake in the oven to cook the cheese and roast the broccoli head. It works well and the Instant Pot cooks the broccoli without drying it out.
What Happens If My Broccoli Head Falls Apart During Cooking
It can happen where it falls apart if your stalk is too short. If that happens the just cut up the florets and lay them flat on the baking sheet and roast that way instead of a head. It will still taste fantastic.

Your oven could be running slightly hot if you find you are roasting your broccoli a little too fast to the point it’s burning.
Pull out your broccoli sooner so you don’t go from roasted to burned or lower the heat a bit and see how that works. All ovens run differently so it can be slight trial and error.

Instant Pot Italian Parmesan Whole Roasted Broccoli is going to rock your world! This whole roasted broccoli offers a stunning presentation value and is jam packed with flavor. I used Italian Dressing and Parmesan cheese to flavor this recipe.
Ingredients
- 1 head of broccoli
- 2-3 Tablespoons Italian dressing (I used a Robusto italian)
- 2 tablespoons Parmesan cheese
Instructions
- Wash your broccoli head. Place in a pie tin. Place on top of a trivet for easy removal.
- Place on trivet in your pot with 1/2 - 1 cup of water.
- Pour Italian dressing over the top of your broccoli. Spread it around so all of your broccoli is basted with some dressing.
- Close the lid, make sure it’s in the sealing position and turn toggle to seal.
- Press Pressure (it should automatically set to HIGH pressure). Set time to 1 minutes. Hit START. When finished do a quick release.
For an extra crispy finish
- Carefully remove your broccoli head & place on a baking sheet, if you did not use a pie tin. Otherwise place the pie tin in the oven.
- Sprinkle 2 TBSP of Parmesan cheese over the top and sides.
- Place in the oven on broil until your cheese is starting to brown.
