I make a variety of this all the time – didn’t know it was a “thing”! I’m totally not into prep work at all so I go much easier – since tomatoes are so expensive lately, I open a can of petite diced tomatoes (the advantage there is you can get different flavors!) and I use the pre-packaged bacon crumbles instead of making my own. So I use one can of tomatoes, one cucumber, and then bacon crumbles. The only other difference is that instead of mayonnaise, I use ranch dressing. YUMMY! Mine ends up “sloppier”/wetter than yours would because of the juice on the tomatoes and the ranch dressing, but I love the flavor of the “juice”.

I made this and it turned out very soupy from the tomatoes. Do you use cherry tomatoes instead of the big tomatoes? It had so much liquid in it that we couldn’t eat it
I used nice big jersey tomatoes in mine, but I removed most of the seeds. I am so sorry, I adjusted the recipe to mention removing the seeds.
I think I would let the cukes and maybe tomatoes weep in a colander while preparing the bacon. I will be trying this at our next family get together which will be Easter. Thanks for sharing!!
