These Monster Christmas Cookie Bars are moist and delicious.  They are not hard to make at all and doesn’t take long to make either.  They have the Christmas colors.  I couldn’t leave that out during this holiday season. 😉  These are homemade and it will make a great snack as well around the home during cold chilly nights.

Watch a Christmas movie with the family and get these out with a glass of milk.  YUM!  We make these and sit with the kids and watch movies and have a great time together.

Monster Christmas Cookie Bars

Ingredients

Cookie Ingredients

  • 1/2 C unsalted sweet cream butter, softened
  • 1/2 C sugar
  • 1 C packed light brown sugar, packed
  • 1 C creamy peanut butter
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 C flour
  • 1 c quick-cooking oats
  • 1 C semi-sweet chocolate chips
  • 1 1/2 C mint M&M'S candies

Cheesecake Ingredients

  • 2 8 oz cream cheese, softened
  • 1/2 C sugar
  • 4 oz semi-sweet chocolate chips, melted
  • 2 large eggs

Instructions

Cookie Instructions

  1. Preheat oven to 350°F.
  2. Line your 9x13 baking dish with parchment paper
  3. Using a standing mixer, beat the butter with sugars and peanut butter until creamy.
  4. Add eggs and vanilla, beat again until combined.
  5. In a large bowl, mix together in salt, baking soda, flour, and oats and mix until well combined.
  6. Gradually add into your wet ingredients
  7. Fold in 1/2 chocolate chips and 1 cup of M&M'S.
  8. Press half of the cookie dough into the bottom of the prepared baking dish and bake in the oven for 5 minutes.
  9. Set aside.

Cheesecake Filling Instructions

  1. In the standing mixer, beat cream cheese until soft and creamy.
  2. Add in sugar and beat until smooth.
  3. Add in melted chocolate and eggs and continue to mix until until eggs are fully incorporated,
  4. Spread cheesecake over first layer of cookie dough.
  5. Top with remaining cookie dough and sprinkle the remaining 1/2 cup candy over the top.
  6. Bake for 35 minutes.
  7. Remove from oven and allow to cool to room temperature then refrigerate overnight
  8. Cut into bars and enjoy with a glass of milk!
