Patriotic No-Bake Cheesecake Trifle

I am a huge fan of cheesecake.  There is a big joke in my family between my mother-in-law and sister-in-law where they tease each other for cracks in their delicious cheesecakes.  Well there are no cracks in my cheesecake because I don’t make them often.  Lets face it, making a cheesecake takes a long time and a lot of ability.  This no-bake cheesecake trifle is the answer to all of my problems.  I am able to make this yummy no-bake cheesecake trifle and enjoy my favorite dessert without all the hassle of making an actual cheesecake. 

This definitely fits the bill for my love for easy recipes.  You all know how I love to make holiday desserts, well this also fits that bill.  You can use whatever color food coloring and sprinkles you want to cater to the holiday or occasion. 

I love simple recipes that look and taste like a million bucks.  Impress your guests at every holiday gathering.

Patriotic No-Bake Cheesecake Trifle

Ingredients
  1. 2 Package Cream Cheese, softened
  2. 2/3 Cup Sugar
  3. 1 Tub Cool Whipped Topping, such as Cool Whip
  4. Graham Crackers crushed or Graham Cracker Pie Crust crushed
  5. Blue & Red Food Coloring
Instructions
  1. Place softened cream cheese and sugar in a bowl and mix until smooth. Fold in whipped topping until well blended. Transfer into a covered container and place in the refrigerator for at least 3 hours.
  2. Once chilled, divide cheesecake mix into 3 bowls. Put enough drops of food coloring to create your blue and red cheesecake mix in nice deep colors. Leave one of your bowls of mix uncolored to be used as your white layer.
  3. Your layers will look real pretty if you happen to have a decorator bag with a nice big round tip. If you don't have one, just use a spoon to create your layers. Add your crushed graham cracker crumbs in between each layer.
  4. Top with a little whipped topping and holiday sprinkles.

Patriotic Marshmallows

I love holidays and I just love preparing holiday themed treats.  I am world-famous for making my special holiday bark.  These delicious chocolate dipped marshmallows are a perfect example of another amazing use for chocolate melts. 

Chocolate melts are really super easy to work with and the treats you can create are priceless.  Everyone who comes to your get together will be completely wowed by these adorable marshmallows. They are definite show stoppers. 

You can decorate your chocolate with any sprinkles you like.  They are equally gorgeous without any sprinkles. 

Not only are these marshmallows absolutely adorable to look at, they are delicious!  There is something about the combination of the chocolate with the marshmallow…. oh my yummy!

This is a really great treat to make with your children as well.  You can supervise with the melting of the chocolate and then let them have fun dipping and decorating. 

If you happen to use the Wilton candy melts the directions on the back are perfect.   If not I will tell you the perfect directions for melting your chocolate. 

 

Melting chocolate:

In a microwave-safe container microwave candy melts at 50% power or the defrost setting on your microwave.  Melt for one minute to start.  Remove and stir.  Place back in the microwave for additional 30 seconds at 50% power.  Remove and stir.  Continue to do this in 30 second intervals until smooth and creamy.  Remember less is better.  You can help melt some pieces that are still not fully melted by stirring with a spoon.  You do not want to over microwave your chocolate. 

 

Ingredients needed:

Red & Blue Chocolate Melts

Lollipop Sticks

Sprinkles

 

Directions for making your marshmallows:

Once melted continue to stir your chocolate to keep it at a nice consistency for best dipping.  Dip the blue side of your chocolate first.  Quickly (before your chocolate starts to firm up) add your sprinkles to your chocolate.  Do all of your marshmallows, dipping the blue side first and sprinkling.  Put aside and allow to completely dry.  Once completely dried turn and dip the red side.  Quickly (before your chocolate starts to firm up) add your sprinkles to your chocolate. Now before the chocolate starts to dry insert your lollipop stick. Let sit until chocolate is completely dried.

What would a holiday be without holiday bark from me.  I love capturing each and every holiday with delicious holiday bark.  July 4th is one of my favorites.  Bark is such a simple easy treat to make that will impress everyone. 

Years ago when I first starting working with chocolate, it was hard to find the chocolate melts.  You usually were only find them in specialty candy making shops.  Now you can easily find the melts in most Party City stores and on Amazon.  I have found them lots of other places so I have learned to keep my eye out for them.  I always have on hand almost, every color available.  This way if the mood strikes for making some sweet treats, I am really to roll. 

The possibilities are really endless, all you have to do is put your creative mind to work.  Check out this adorable use of chocolate dipped marshmallows

Watermelon Sorbet

I am just loving all the watermelon already this year.  I promised myself to find really delicious creative uses for all of my watermelon and sweet summer corn that I just can not seem to resist buying.  Watermelon is just a truly delicious treat in itself.  The recipes I have selected just add to the natural yumminess.  My boys are loving each and every recipe, as they each have a real special touch to them.  Watermelon sorbet sounds as delicious and fancy as it truly is.  The truth is, it is a real EASY recipe.  Your family and friends will feel like they are being treated to a decadent treat from a fine restaurant. 

This summer my boys and I will be enjoying all the sweet tastes that we all associate with summer.  What better memories could my boys have then sitting on the porch after a great game of volleyball and enjoying some lovingly made watermelon sorbet.  This is going to be a great summer.

Watermelon Sorbet

Ingredients
  1. 8 Cups Seedless Watermelon cut into small pieces
  2. 1 Cup Sugar
  3. 1 Cup Water
  4. 2 Tsp Fresh Squeezed Lemon Juice
Instructions
  1. In a small pot over medium heat, bring the sugar and the water to a boil. Stirring until the sugar is completely dissolved. Remove from the heat and allow the syrup to cool. Once cooled add the lemon juice to the syrup.
  2. In a blender, place watermelon in batches and puree.
  3. Once all of your watermelon is pureed place into a large bowl and mix well with the syrup.
  4. Place mixture into a glass baking dish and freeze until firm.
  5. Serve to the ones you love the most on a hot day.

Corn Risotto

Watermelon and fresh corn, those are my two weaknesses in the summer months.  I find it nearly impossible to walk into a supermarket or fruit stand and not walk out with one or the other, or both.  There could be worse things in life… right?  I have just made it my mission this year to find better uses for all this corn and watermelon (check out my new watermelon recipes on the blog).  Sometimes my kids have actually had enough of both by the end of the summer months.  Not this year!  This year I am working on lots of new delicious recipes to keep changing things up.  This corn risotto is just the first of many delicious corn recipes we will feature. 

This corn risotto is just to die for.  Very simple flavors blend together to make this creamy yummy dish.  I used fresh corn but you can also substitute with can or frozen. 

This recipe is definitely one I would consider easy.  My son actually helped me make this, which made it even yummier.

Ingredients
  1. 4 Cups Vegetable Stock
  2. 2 TBSP Olive Oil
  3. 1 1/2 Cups Chopped Onion
  4. 4 Cloves Garlic, minched
  5. 1 Cup Arborio Rice
  6. 3 Ears of Corn, kernels cut from boiled ears.
  7. 3/4 Cup Parmesan cheese, shaved or larger sized shreds
Instructions
  1. In a medium sized pot bring the stock and 1 1/2 cups water to a simmer over high heat. Reduce heat to low and keep warm.
  2. In a large deep skillet, heat the oil over a medium flame. Add the onion, stirring often until softened (about 5 minutes). Add the garlic and cook for about another minute. Stir in the rice, reduce heat to a medium low flame. Move your rice around giving it a chance to get heated and blend in well with your onions and garlic.
  3. Add 2 cups of the stock/water to the skillet. Simmer, stirring frequently until the liquid is absorbed. This will take about 8 minutes. Add another cup of stock and continue stirring frequently. Give this new cup of liquid time to start absorbing and then add the last of your liquid. Keep stirring and cooking over a medium low flame until all of the liquid is absorbed. In total it should take about 15-20 minutes.
  4. Stir in the cooked corn that has been cut from the ears and kernels separated, cook about 2 minutes giving the corn a chance to fully heat. Remove from the heat and add in 1/2 cup of parmesan cheese. Use the rest of the cheese to sprinkle on the top and serve additionally on the side.

Watermelon Float

I love sleepy summer days with my boys.  Now that they are getting a bit older they are starting to enjoy lazy days where we just hang around,  catch up on some reading, catch up on some movies, catch up on some stories, catch up on some new recipes.. wherever your mood takes you.  On these days I love to make some sweet treats for my boys.  Something a little special and out of our every day normal.  This Watermelon Float is a super easy treat and every one of my boys enjoyed it.  Think root beer float but better!

This time of year Watermelons are filling our markets.  They are sweet and juicy and I find myself craving it often.  I decided to get a bit more creative with all this watermelon I keep on buying. 

This is a really refreshing treat and one that can be had with low guilt.  Use frozen yogurt instead of ice cream and diet soda to shave off a few calories.  So sit back and relax and enjoy this treat with your kids.

Ingredients
  1. 5 Cups Watermelon cut into small cubes
  2. 1 Cup lemon-lime soda
  3. 1 Pint Vanilla ice cream (or frozen yogurt)
Instructions
  1. Place watermelon into blender in batches and blend completely. Depending on how many pits were in your watermelon you may want to pour it through a strainer before adding to a pitcher. Add lemon-lime soda into pitcher stirring to mix with watermelon.
  2. Scoop ice cream into your cup, using as much as you like (we like a lot). Pour watermelon soda over your ice cream. Serve with a spoon and straw.
